Dry Rub
3 tbsp(s) yellow mustard
1/4 cup(s) brown sugar
2 tbsp(s) paprika
1 tbsp(s) garlic powder
1 tbsp(s) onion powder
2 tsp(s) black pepper
2 tsp(s) kosher salt
1 tsp(s) cayenne pepper
1 tsp(s) cumin
Victory Glaze
2 cup(s) ketchup
1/2 cup(s) molasses
1/2 cup(s) brown sugar
1/3 cup(s) apple cider vinegar
2 tbsp(s) Worcestershire sauce
1 tbsp(s) liquid smoke
1 tbsp(s) black pepper
1 tbsp(s) garlic powder
1 tsp(s) cayenne

Instructions

1. Preheat your oven to 275°F (135°C).
2. Remove the membrane from the back of the St. Louis cut pork ribs.
3. In a small bowl, mix together all dry rub ingredients: brown sugar, paprika, garlic powder, onion powder, black pepper, kosher salt, cayenne pepper, and cumin.
4. Spread yellow mustard evenly over both sides of the ribs.
5. Generously apply the dry rub mixture to both sides of the ribs, pressing it into the meat.
6. Wrap the ribs tightly in aluminum foil, creating a sealed packet.
7. Place the foil-wrapped ribs on a baking sheet and cook in the preheated oven for 2.5 to 3 hours.
8. While ribs are cooking, prepare the Victory Glaze by combining ketchup, molasses, brown sugar, apple cider vinegar, Worcestershire sauce, liquid smoke, black pepper, garlic powder, and cayenne in a saucepan.
9. Simmer the glaze over medium-low heat for 20-30 minutes, stirring occasionally, until it thickens.
10. Remove ribs from oven and unwrap carefully.
11. Brush ribs generously with Victory Glaze.
12. Increase oven temperature to 425°F (218°C).
13. Return ribs to oven, uncovered, and bake for an additional 10-15 minutes until glaze caramelizes.
14. Remove from oven and let rest for 10 minutes before serving.
15. Slice ribs and serve with extra glaze on the side.
