Instructions
1. Preheat the oven to 275°F (135°C).
2. Remove the membrane from the back of the ribs by sliding a knife under the membrane and peeling it off.
3. Coat each rack of ribs evenly with yellow mustard.
4. In a small bowl, mix together all the dry rub ingredients: brown sugar, paprika, chili powder, cinnamon, kosher salt, and black pepper.
5. Generously sprinkle the dry rub mixture over both sides of the ribs, patting it into the meat.
6. Wrap each rack of ribs individually in heavy-duty aluminum foil, creating a tight seal. If smoking, try the 3-2-1 method.
