Instructions

1. In a large mixing bowl, combine the chia seeds, canned coconut milk, maple syrup, and vanilla extract.
2. Stir the mixture thoroughly to combine all ingredients and break up any clumps of chia seeds.
3. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, until the chia seeds have absorbed the liquid and the pudding reaches a thick, pudding-like consistency.
4. While the chia pudding is chilling, prepare the fruit. Peel and dice the ripe mango into bite-sized pieces.
5. Cut the fresh pineapple into bite-sized chunks.
